Our Ultimate Strawberry Pie recipe is simple, sweet, bursting with fresh flavor and super easy to make! This farmhouse-inspired treat brings a taste of comfort to any occasion.

I love strawberry recipes, but this one may be my very favorite. It is perfect for spring and summer and a great gift to put a smile on someone’s face. It is bursting with fresh strawberries, paired with a sweet strawberry glaze, makes this pie a refreshingly delicious and beautiful desert. Top it off with some homemade whipped cream makes this pie utterly indulgent.
This strawberry pie can be brought together in a pinch and ready to serve by afternoon, when company arrives, or if you’re just craving a strawberry treat. However, you can absolutely make this the night before and have one less thing to cook the next day. It is also a great way to use up those extra berries. They go quickly!
Every spring my mom would get up early one morning and go to the U-pick strawberry farm. Later that afternoon, she would come home with flats of these freshly-picked delicacies. I loved this tradition because I knew what was coming… Mom’s strawberry pie. It was one of her favorites and everyone requested the recipe. Is there anything better than freshed picked strawberries in the spring? Except for maybe fresh-picked strawberries covered in homemade whipped cream. Mmmm…

Why We Love This Strawberry Pie
Healthier Alternative: Although, it is sweet, with the fresh fruit, it’s a healthier alternative to store-bought treats. You know what’s in it, and can feel better about what you’re feeding your family.
No Bake: You don’t have to turn on the oven! Who doesn’t love this in the warm weather?
Super Simple: It’s simple to assemble and the refridgerator does the majority of the work. All you’ll need is 3 ingredients and a pie crust — even store bought. I’m talking to you busy mama.
No Waste: I don’t know about you, but I feel really guilty wasting food. This is a delicious way to reat way to use those juicy strawberries.
Tips
- Whole strawberries make a great presentation, but you can absolutely slice them up. It makes it a bit easier for the little ones to eat. Possibly less messy too.
- If you’re making homemade pie crust, poke holes in it and back for a few minutes so it stays crisp after you add the berries and the glaze.
- Use a straw to hull the berries. Just punch the straw through the bottom of the berry and poke it through the top. Make sure you lift the leaves before you do this for easier removal.
- Ensure the Jello dissolves completely, and be sure to cool a bit before you pour.
- Keep refridgerated.
Tools You May Need
- Food processor – you can do this by hand or in a stand mixer as well.
- plastic wrap
- Pie pan
- Silicone spatula
- Strawberry huller, parining knife or sturdy straw
- Sauce pan or medium pot
- Measuring cups and spoons
- Cutting board
- Paper towel.
- Electric mixer – if you’re making homemade whipped cream

Glaze
- Corn starch
- Strawberry gelatin powder
- Sugar
How to Make Strawberry Pie
Quick Recipe
Wash and hull strawberries, let dry on paper towel. Add whole or sliced berries into pie crust.
In your sauce pan, add water and corn starch. Cook until it looks thick. Think Vicks VapoRub or Vaseline. It will become less clear and thicken. Remove from heat and add Jello. Stir until dissolved. Let cool for about 15 minutes.
Carefully pour warm glaze over berries, doing your best to cover all of them. It can easily run over, so you may want to do this over a sheet of parchment or have something to catch any overflow.
Set in the fridge for 3 hours or overnight.
Storage – Store in the refrigerator for up to 3 days.

Yes!
I have never tried it, but I would not recommend it. The berries need to be dry and have some structure to hold up.

- 4 cups fresh strawberries

- 2 tablespoons cornstarch
- 3 ounces strawberry gelatin powder (Jello)
Notes
- Pre-made pie crusts are fine. If it is uncooked, poke some holes around the crust and place in a 400 degree oven for 10-12 minutes.
- Whipping cream for optional topping.
